OLIVE OIL CHOCOLATE MOUSSE

Olive oil is such a versatile ingredient, and using a good quality one is the key to perfecting a recipe. G.C by George Calombaris Olive Oil is produced exclusively from the premium Koroneiki & Psilolia varieties from the mountain area of South Crete.

INGREDIENTS

  • 100g George Calombaris extra virgin olive oil
  • 150g 55% dark chocolate
  • 250g 35% Cream, whipped into soft peaks

METHOD


  1. Melt chocolate in a bain marie
  2. Stir in olive oil
  3. When at 42°C fold in the cream

Serves/makes: 4 portions / 800 g
